Ingredients

  • Meatballs , can be home made or frozen. I used QueRico! Albondigas meatballs from Smart and Final.The recipe on the package calls for 24+32 meatballs.
  • 1 49 oz can beef or chicken broth, I use chicken
  • 1 8 oz can tomato sauce
  • 1 small onion, diced to 1/4 inch
  • 3 medium carrots, sliced to 1/2 inch
  • 2 celery stalks, sliced to 1/2 inch
  • 1 clove garlic, minced
  • 1 medium potato or chayote, dice 1/2 inch
  • 1 medium zucchini squash, or Mexican squash
  • ½ tsp cumin
  • ½ tsp oregano
  • chopped cilantro, plus reserve some cilantro for garnish
  • salt and pepper to taste

Instructions

  • Place all ingredients in a pot and simmer for 30 minutes. I have varied the different amounts of vegetables.
