Ingredients
- Meatballs , can be home made or frozen. I used QueRico! Albondigas meatballs from Smart and Final.The recipe on the package calls for 24+32 meatballs.
- 1 49 oz can beef or chicken broth, I use chicken
- 1 8 oz can tomato sauce
- 1 small onion, diced to 1/4 inch
- 3 medium carrots, sliced to 1/2 inch
- 2 celery stalks, sliced to 1/2 inch
- 1 clove garlic, minced
- 1 medium potato or chayote, dice 1/2 inch
- 1 medium zucchini squash, or Mexican squash
- ½ tsp cumin
- ½ tsp oregano
- chopped cilantro, plus reserve some cilantro for garnish
- salt and pepper to taste
Instructions
- Place all ingredients in a pot and simmer for 30 minutes. I have varied the different amounts of vegetables.
