Beef Stroganoff

Ingredients

  • 2 lbs sirloin tip beef, cut in strips
  • ½ c finely chopped onion
  • 2 tbsp butter or margarine
  • 2 tbsp flour
  • 2 beef bouillon cubes
  • ½ c sour cream
  • 2 tbsp tomato paste
  • 1 tsp dry mustard
  • ½ tsp salt
  • dash of black pepper
  • 4 oz can mushrooms and liquid
  • 1 ½ c water

Instructions

  • Cook meat quickly in butter, browning all sides. Remove meat.
  • Add onion to butter and cook until onion is clear.
  • Blend in flour.
  • Stir in bouillon cubes dissolved in water.
  • Cook until slightly thickened.
  • Add tomato paste, seasonings, mushrooms, and meat.
  • Cover and simmer 30 minutes until meat is tender.
  • Fold in sour cream.
  • Cook until mixture is just heated.
  • Serve over cooked noodles or mashed potatoes.
