I do NOT like sauerkraut, but maybe someone else would like to try out this recipe. It was part of my mother’s collection of recipes from my grandmothers, so am including it here.
Overnight Cranberry Salad
This salad has cranberries, mini marshmallows, diced apples, grapes, walnuts, and whipped cream.
Orange Salad
This salad calls for orange gelatin, crushed pineapple, apricots, marshmallows, and pineapple or apricot juice.
Jim’s Fruit Salad (Ambrosia)
This is one of my dad’s favorites that my grandmother made. Coconut, marshmallows, crushed pineapple, mandarin oranges, and sour cream. You can also add grapes, but we usually didn’t.
Cucumber Salad
Thinly sliced cucumbers, heavy cream, and lime juice.
Cranberry Salad
Another Jell-O salad. This one has strawberry flavor with cranberries, sugar, orange pieces, apples, and walnuts or pecans.
Carrot Salad
Canned carrots with green peppers, onions, sugar, and tomato soup. Doesn’t really sound appetizing to me, but the recipe came from my grandmother.
Bethany’s Jell-O Salad
We always have this at Thanksgiving. It is one of Bethany’s favorites, so we started calling it Bethany’s salad. It calls for apricot Jell-O, but that is hard to find. If you can’t find apricot, use orange. It also has cream cheese, grated carrots, pineapple, and pecans. This photo is not the best…will try to get a better one later on.
Bacon Cauliflower Salad
This salad will sit overnight in the refrigerator in layers. Before serving, mix all the ingredients together.
Apricot Gelatin Salad
This recipe is very similar to Bethany’s salad, but doesn’t have the shredded carrots and has mandarin oranges instead. This has apricot Jell-O, mandarin oranges, crushed pineapple, cream cheese, and “Dream Whip”. Is Dream Whip still something you can buy? I have never used it.
Broccoli Casserole
Combine mushroom soup, celery soup, cheddar cheese, and Ritz crackers with broccoli for this casserole from my grandmother, Thelma Beatty.
