Chicken Broccoli Casserole

Ingredients

  • 4-5 chicken breasts, cooked and diced
  • 2 boxes frozen chopped broccoli
  • 2 cans cream of chicken soup
  • ½ cup mayonnaise
  • 1 tsp lemon juice
  • 1 tsp curry powder, or to taste
  • 1 ½ - 2 cups shredded cheddar cheese
  • bread crumbs OR French fried onions
  • Optional: cooked rice

Instructions

  • Preheat oven to 325°.
  • Cook and dice chicken.
  • Cook broccoli.
  • Combine soup, mayonnaise, lemon juice, and curry powder in a bowl and set aside.
  • Butter the bottom of a 9" x 13" casserole dish.
  • Spread cooked broccoli on the bottom of the dish.
  • Place diced chicken over the broccoli.
  • Spread the soup mixture over the chicken and spread evenly.
  • Top with cheese, then bread crumbs or onions.
  • Back for 30 minutes.
  • Optional: Rice can be added between the broccoli and chicken layers, or casserole can be spooned over rice.
