Ingredients
- 4-5 chicken breasts, cooked and diced
- 2 boxes frozen chopped broccoli
- 2 cans cream of chicken soup
- ½ cup mayonnaise
- 1 tsp lemon juice
- 1 tsp curry powder, or to taste
- 1 ½ - 2 cups shredded cheddar cheese
- bread crumbs OR French fried onions
- Optional: cooked rice
Instructions
- Preheat oven to 325°.
- Cook and dice chicken.
- Cook broccoli.
- Combine soup, mayonnaise, lemon juice, and curry powder in a bowl and set aside.
- Butter the bottom of a 9" x 13" casserole dish.
- Spread cooked broccoli on the bottom of the dish.
- Place diced chicken over the broccoli.
- Spread the soup mixture over the chicken and spread evenly.
- Top with cheese, then bread crumbs or onions.
- Back for 30 minutes.
- Optional: Rice can be added between the broccoli and chicken layers, or casserole can be spooned over rice.
