Ingredients

  • 2 c cornmeal
  • 5 tsp baking powder
  • 3 eggs
  • 2 tbsp melted butter
  • 2 c flour
  • 1 tsp salt
  • 2 c milk
  • ½ c boiling water

Instructions

  • Pour boiling water over cornmeal and let stand until cool.
  • Sift flour, baking powder, and salt together.
  • Beat eggs until light and add them to cornmeal.
  • Then add milk, flour, and melted better.
  • Beat until batter is smooth.
  • Pour into a shallow, well-greased pan and bake at 400-450° for 25 minutes.
