Ingredients
- 1- 1.5 lbs ground beef
- 2-3 cups of frozen, mixed vegetables
- 1 onion, chopped
- 2 stalks of celery
- 3-4 red potatoes, diced - don't peel
- 2 peppers - any combination of colors, but I used 1 orange and 1 yellow
- 5 cups of beef stock or broth
- 2 cups of tomato juice
- 3 cloves crushed garlic
- 3 Tbsp tomato paste
- 1 14.5 oz can whole tomatoes, hand crushed
- 1 tsp kosher salt
- 3 tsp parsley flakes
- 1 tsp oregano
- ½ tsp black pepper
- ¼ tsp ground red pepper, or more to taste (I probably used 1/2 tsp)
Instructions
- Combine all ingredients in pot and bring to boil, then simmer until ingredients are cooked through and potatoes are soft.
Notes
Stew meat can be substituted for the ground beef if cut in small pieces.
