French Pancakes (Crepes)
These were frequently made for breakfast every morning that I spent the night at my friend Christy's house. The recipe came from her mother. Since Sally had 4 children who would often all have someone spending the night it took quite a while to go through each kid, once crepe at a time!

Ingredients
- 3 eggs
- 1 c flour
- 1½ c milk
- 2 tbsp butter
Instructions
- Combine eggs, flour, and milk.
- Melt butter in the small skillet you are going to use, add melted butter to batter.
- Pour small amount of batter on the bottom of the skillet and rotate to spread the batter to cover the bottom of the pan.
- Flip when edges start to crisp and underside starts to brown slightly.
