Southern Green Beans

This is a traditional Thanksgiving dish in our family. Made with fresh green beans and simmered for hours with ham hocks and onions.

Ingredients

  • 2 lbs fresh green beans
  • 2 ham hocks
  • 1 onion
  • water

Instructions

  • Wash and trim the green beans.
  • Dice the onions. I keep them on the larger size.
  • Rinse the ham hocks.
  • Add all ingredients and add water to cover.
  • Let simmer for several hours until the ham hocks are broken down and green beans are soft. Remove ham hock bones and fat and trim up the larger pieces of ham.

Notes

This recipe can also be made in the crock pot. Instructions are virtually the same except that the crock pot cooking time will be longer. Chicken broth can be substituted for the water, though I have never used broth myself.
