Ingredients

  • 4 egg whites
  • ½ tsp cream of tartar
  • 1 c sugar
  • 4 egg yolks
  • ½ c sugar
  • 3 tbsp lemon juice
  • 2 tbsp grated rind
  • 1 prepared pie crust

Instructions

  • Cook egg yolks, ½ c sugar, 3 tbsp lemon juice, and 2 tbsp grated rind in a sauce pan.
  • Pour into pie tin.
  • Beat egg whites, cream of tartar, 1 c sugar until stiff. Cover entire pie with meringue mixture, sealing to edges of pie shell.
  • Bake at 250° for 20 min, then 275° for 40 min.
