Ingredients
- 4 egg whites
- ½ tsp cream of tartar
- 1 c sugar
- 4 egg yolks
- ½ c sugar
- 3 tbsp lemon juice
- 2 tbsp grated rind
- 1 prepared pie crust
Instructions
- Cook egg yolks, ½ c sugar, 3 tbsp lemon juice, and 2 tbsp grated rind in a sauce pan.
- Pour into pie tin.
- Beat egg whites, cream of tartar, 1 c sugar until stiff. Cover entire pie with meringue mixture, sealing to edges of pie shell.
- Bake at 250° for 20 min, then 275° for 40 min.
