Ingredients

  • 4 eggs
  • 3 c flour
  • ½ tsp anise oil
  • ½ tsp anise seed
  • ½ tsp baking powder
  • 1 lb powdered sugar

Instructions

  • Beat eggs 10 minutes with electric beater.
  • Gradually add powdered sugar.
  • Continue to beat and add baking powder to flour.
  • Fold in flower and baking powder.
  • Add anise oil and anise seed.
  • Roll out on a lightly floured board to about 1/3-1/2" thick.
  • Sprinkle generously with flour and press with springerle rolling pin.
  • Cut cake into squares, brushing off any extra flour, and place on baking sheet to dry out for 12-24 hours.
  • Bake on fully greased backing sheet at 300° for 15-20 min.
  • They should turn faintly yellow.
