Ingredients
- 2 cups All purpose flour
- 3 egg yolks
- 1 egg
- 2 tsp salt
- 1/4-1/2 cup water
Instructions
Making the Noodles
- Make a well in the center of the flour.
- Add egg yolks, egg, and salt.
- Mix in water, 1 tablespoon at a time until dough is stiff but easy to roll.
- Divide dough into 4 equal parts.
- Roll dough out with rolling pin.
- Cut into thin strips. The dough can be folded in thirds prior to cutting.
- Shake out noodles and place on towel until stiff and dry.
Cooking the Noodles
- Break dry strips into smaller pieces.
- Boil in 3 quarts of water with 1 tbsp of salt.
- Cook until tender, about 12-15 minutes.
Notes
After drying, the noodles can be can covered and stored for more than a month.
