Ingredients

  • 2 cups All purpose flour
  • 3 egg yolks
  • 1 egg
  • 2 tsp salt
  • 1/4-1/2 cup water

Instructions

Making the Noodles

  • Make a well in the center of the flour.
  • Add egg yolks, egg, and salt.
  • Mix in water, 1 tablespoon at a time until dough is stiff but easy to roll.
  • Divide dough into 4 equal parts.
  • Roll dough out with rolling pin.
  • Cut into thin strips. The dough can be folded in thirds prior to cutting.
  • Shake out noodles and place on towel until stiff and dry.

Cooking the Noodles

  • Break dry strips into smaller pieces.
  • Boil in 3 quarts of water with 1 tbsp of salt.
  • Cook until tender, about 12-15 minutes.

Notes

After drying, the noodles can be can covered and stored for more than a month.
