Ingredients

  • 1 1lb 4oz can crushed pineapple , drain and reserve juice
  • 1 1lb 4oz can apricots, drained and cut, reserve juice
  • 2 3 oz pkg orange gelatin
  • 2 c hot water
  • 1 c miniature marshmallows
  • 5 tbsp flour
  • ½ c sugar
  • 1 egg
  • ½ c whipping cream, whipped
  • grated American cheese

Instructions

  • Combine apricots and pineapple.
  • Add 1 c of either the pineapple OR apricot juice from the can and stir well.
  • Add marshmallows and let set until firm.
  • In another bowl, combine 1 c of pineapple or apricot juice (or half and half), flour, and sugar.
  • Mix well and cook until thickened.
  • Remove from heat and beat in 1 egg; let cool.
  • Fold in whipped cream and spoon over salad.
  • Sprinkle with grated American cheese.
