Ingredients
- 2 med onions, sliced thin
- 2 med green peppers, sliced thin
- 1 lg clove garlic, crushed
- 1 med eggplant, peeled and cubed
- 2 med zucchini, sliced
- 5 med tomatoes or 1 lg can
- ¼ c parsley
- salt and pepper to taste
Instructions
- Coat large pan with nonstick spray, sauté onions, garlic, and green pepper. Add other vegetables.
- Simmer for 25-30. Add parsley and cook 5-10 minutes longer.
