Ingredients

  • 2 med onions, sliced thin
  • 2 med green peppers, sliced thin
  • 1 lg clove garlic, crushed
  • 1 med eggplant, peeled and cubed
  • 2 med zucchini, sliced
  • 5 med tomatoes or 1 lg can
  • ¼ c parsley
  • salt and pepper to taste

Instructions

  • Coat large pan with nonstick spray, sauté onions, garlic, and green pepper. Add other vegetables.
  • Simmer for 25-30. Add parsley and cook 5-10 minutes longer.
