Ingredients

Cake

  • ½ c shortening
  • 1 ½ c sugar
  • ½ tsp salt
  • 1 egg
  • 1 tbsp baking soda in 1 c sour milk
  • 2 c plus 1 tbsp flour
  • 3 c rhubarb, cut fine
  • ¼ c colored candy sprinkles, or red food coloring

Topping

  • c sugar
  • c nut meats
  • 1 tbsp cinnamon

Instructions

  • Preheat oven to 350°.
  • Cream shortening and sugar. Add salt and beat in egg.
  • Add baking soda & milk mixture with flour, alternating back and forth between the two.
  • Stir in candy sprinkles (or food coloring) and rhubarb.
  • Pour into 13"x9" metal cake pan.
  • Mix topping ingredients and sprinkle over cake batter.
  • Bake 45 minutes.
