Sour Cream Rhubarb Squares

Ingredients

  • ½ c granulated sugar
  • ½ c chopped nuts
  • 1 tbsp melted butter or margarine
  • 1 tsp ground cinnamon
  • c packed brown sugar
  • ½ c shortening
  • 1 egg
  • 2 c flour
  • 1 tsp baking soda
  • 1 tsp salt
  • 1 c sour cream
  • c rhubarb cut into 1/2" pieces

Instructions

  • Topping: mix sugar, nuts, butter, and cinnamon till crumbly and set aside.
  • Cream together brown sugar, shortening, and egg.
  • Thoroughly stir together flour, soda, and salt; add to creamed sugar/shortening mixture and add sour cream.
  • Stir in rhubarb and put into greased and floured 13 x 9 pan. Sprinkle with reserved topping.
  • Bake at 350° for 45-50 minutes.
  • Serve warm or cool.
