Southern Creole Pralines

Ingredients

  • 1 ½ c brown sugar
  • 1 ½ c granulated sugar
  • 1 tsp vinegar
  • 1 cup water
  • 1 Tbsp butter
  • 2 cups pecan halves

Instructions

  • Combine sugars, water, and vinegar.
  • Cook to soft ball stage.
  • Add butter, pecans, and red food coloring (if desired).
  • Remove from heat and beat immediately until it starts to thicken and becomes cloudy. (Pralines should be granular so don’t cool syrup before beating).
  • Quickly drop heaping Tbsp on waxed paper or foil.
