Spinach Quiche

Ingredients

  • 1 9" pastry/pie crust
  • 4 eggs, beaten
  • 1 c milk
  • ¾ tsp salt
  • ¼ tsp pepper and nutmeg
  • 1 pkg frozen spinach, thawed and drained
  • 1 c shredded Swiss cheese, divided

Instructions

  • Prick pastry and bake in preheated 425° oven for 8 minutes.
  • In medium bowl, mix well the eggs, milk, salt, pepper and nutmeg.
  • Layer spinach and ½ c cheese in pie shell.
  • Pour in egg mixture, sprinkle with remaining ½ c cheese.
  • Bake at 425° for 10 minutes. Reduce temperature to 325° and bake 25 minutes longer or until knife inserted in center comes out clean.
  • Let stand 5 minutes before serving.
