Ingredients
- 1 9" pastry/pie crust
- 4 eggs, beaten
- 1 c milk
- ¾ tsp salt
- ¼ tsp pepper and nutmeg
- 1 pkg frozen spinach, thawed and drained
- 1 c shredded Swiss cheese, divided
Instructions
- Prick pastry and bake in preheated 425° oven for 8 minutes.
- In medium bowl, mix well the eggs, milk, salt, pepper and nutmeg.
- Layer spinach and ½ c cheese in pie shell.
- Pour in egg mixture, sprinkle with remaining ½ c cheese.
- Bake at 425° for 10 minutes. Reduce temperature to 325° and bake 25 minutes longer or until knife inserted in center comes out clean.
- Let stand 5 minutes before serving.
