Ingredients
- 4½ oz yellow corn meal
- 1½ c nonfat milk
- 1 egg, beaten
- 1 c chopped onion
- 2 cloves minced garlic
- 12 oz lean ground beef, cooked
- 2 c canned, crushed tomatoes
- 1 pkg chili seasoning mix
- 1½ c whole kernel corn
- 12 sliced black olives
- 6 oz grated cheddar
Instructions
- Mix cornmeal, milk, egg in 2 qt casserole dish sprayed with nonstick spray.
- Sauté onion and garlic in sauce pan.
- Add beef, tomatoes, seasoning mix, corn, and olives.
- Stir into corn meal mixture.
- Bake at 350° for 30-45 minutes.
- Top with cheese and cook 5 more minutes.
