Vegetable Beef Soup

Ingredients

  • 1 bag frozen mixed vegetables
  • 1 lb stew meat
  • ½ head of cabbage, cut into 1 inch pieces
  • 4-5 potatoes, peeled and cut into 1/2" pieces
  • 1 onion, cut into 1/2" pieces
  • 1 large can or bottle of tomato juice
  • salt and pepper to taste

Instructions

  • Pour tomato juice into pot.
  • Cut stew meat into 1/4" pieces if they are too large.
  • Add frozen vegetables, onion, potatoes, and stew meat.
  • Season with salt and pepper.
  • Cook until meat and potatoes are cooked through.
  • Add cut cabbage.
  • Serve when cabbage, potatoes, and onions are tender.

Notes

Recipe can also be cooked in a crockpot, adding the cabbage at the end.
