Meatballs
can be home made or frozen. I used QueRico! Albondigas meatballs from Smart and Final.The recipe on the package calls for 24+32 meatballs.

can beef or chicken broth
I use chicken

8 oz
can tomato sauce
1
small onion
diced to 1/4 inch
3
medium carrots
sliced to 1/2 inch
2
celery stalks
sliced to 1/2 inch
1
clove
garlic
minced
1
medium potato or chayote
dice 1/2 inch
1
medium zucchini squash
or Mexican squash
½
tsp
cumin
½
tsp
oregano
chopped cilantro
plus reserve some cilantro for garnish
salt and pepper to taste
Instructions
Place all ingredients in a pot and simmer for 30 minutes.
I have varied the different amounts of vegetables.
