Egg Noodles

Instructions
Making the Noodles
Make a well in the center of the flour.
Add egg yolks, egg, and salt.
Mix in water, 1 tablespoon at a time until dough is stiff but easy to roll.
Divide dough into 4 equal parts.
Roll dough out with rolling pin.
Cut into thin strips. The dough can be folded in thirds prior to cutting.
Shake out noodles and place on towel until stiff and dry.
Cooking the Noodles
Break dry strips into smaller pieces.
Boil in 3 quarts of water with 1 tbsp of salt.
Cook until tender, about 12-15 minutes.
Notes
After drying, the noodles can be can covered and stored for more than a month.
