Ingredients

ground beef

of frozen
mixed vegetables

onion
chopped

stalks of celery

red potatoes
diced - don't peel

peppers - any combination of colors
but I used 1 orange and 1 yellow

of beef stock or broth

of tomato juice

crushed garlic

tomato paste

can whole tomatoes
hand crushed

kosher salt

parsley flakes

or more to taste (I probably used 1/2 tsp)
Instructions
Combine all ingredients in pot and bring to boil, then simmer until ingredients are cooked through and potatoes are soft.
Notes
Stew meat can be substituted for the ground beef if cut in small pieces.
