Instructions
Prick pastry and bake in preheated 425° oven for 8 minutes.
In medium bowl, mix well the eggs, milk, salt, pepper and nutmeg.
Layer spinach and ½ c cheese in pie shell.
Pour in egg mixture, sprinkle with remaining ½ c cheese.
Bake at 425° for 10 minutes. Reduce temperature to 325° and bake 25 minutes longer or until knife inserted in center comes out clean.
Let stand 5 minutes before serving.
